I’ll have a maternity sneak peek to show you soon, but today I thought I’d write about something other than photography. (Yes, there is more to my life than photos!)
I’m not exactly the most domestic person you’ll ever meet. I like to bake, but don’t often do much cooking (my husband is the cook around here). However, there are certain things that fall to me. Those things include breakfast (if the menu is something other than eggs) and any food that we plan to take someplace. Don’t ask me why I’m the one who ends up making the food for public consumption!
Yesterday, Darin mentioned that pancakes might be good for Sunday breakfast. So after church today, I pulled out Joy of Cooking and opened it to the batter-spattered pancakes page. But rather than making the same-old same-old, I decided to try the silver dollar sour cream pancakes. Oh my gosh . . . they were SOOOO good! (Well, the ones that I didn’t burn were good—it took me a while to get the burner adjusted just right.) I think they were the most tender pancakes I’ve ever had! And that’s why they need to be silver dollar size—I can’t imagine trying to flip bigger ones.
We had planned to go to a Super Bowl party this afternoon, but Darin came down with a cold and isn’t feeling up to it. But I already had all the ingredients to make taco dip (seen above), so that was next on my agenda. I was kind of making things up as I went along, and once I had it all finished I realized I’d forgotten to include the salsa. I guess we’ll have to serve it on the side instead.
